Chocolate Covered Strawberries
These are simple to make, you only need two ingredients and you can feel justified in eating most of them yourself. Perfect for Valentines Day and my birthday. Here's what you need:
1. Fresh Strawberries
2. Milk Chocolate chips or Dark Chocolate Chips (choose a quality chocolate -- Guittard is the same chocolate used by Sees and is available at many grocery stores)
Directions:
1. Wash and dry the strawberries. Make sure they are dry before dipping. Give them time to dry on a paper towel.
2. Melt the chocolate chips in a glass bowl in the microwave or in a double boiler over the stove. Stir until all chips have melted. If using microwave, set it on 2 minutes first, and then check and stir. Do not over heat. The chips should still hold their shape, but be melted enough to stir to a smooth consistency. And do not add any water or anything else -- just melt the chocolate.
3. Dip each strawberry and set them on parchment paper to set. Place them in the refrigerator to chill and set up further.
